Un mare di miele

Come ogni anno è di nuovo estate. Le temperature raggiungono l’apice, le serate si protraggono fino a notte fonda e tutti, più o meno, sognano il loro posto al sole.

Per chi ha già raggiungo le spiagge o per chi ancora deve mettersi in viaggio – e anche per chi,, quest’anno, osserverà le onde solo su Instagram – ecco tre ricette che mettono insieme “mare e miele”: piatti gustosissimi ed estivi che arrivano direttamente dalle coste del Mediterraneo e, almeno con il palato, ci permetteranno di fare un tuffo!

IN SARDEGNA CON LE SEADAS

È difficile dire se le coste più belle d’Italia siano in Sardegna: ma più facile attribuire alla seadas la palma d’oro del piatto più goloso da preparare con il miele. Croccanti, fresche (grazie al limone), goderecce e deliziose, le seadas sono facilissime da preparare e deliziano ogni palato. Sono frittelle ripiene di pecorino fresco, con un topping – come usano dire gli chef contemporanei – di dolcissimo miele. Già, ma quale miele? Trattandosi di un piatto sardo che utilizza pecorino non stagionato e dolce, il miele giusto è quello di Corbezzolo. Oppure per chi non ama il suo gusto intenso e amaro, consigliamo Miele d’Arancio o di Acacia. Vi consigliamo mezzo cucchiaino di questo miele dal retrogusto amaro sulle seadas appena fritte e calde: il calore scioglierà i cristalli imbevendo leggermente la pasta e amalgamandosi perfettamente con il formaggio!

La ricetta è facilissima.

INGREDIENTI

  • 100 g di farina di semola rimacinata
  • 200 g di farina «00»
  • 300 g di formaggio pecorino dolce e fresco
  • 85 ml di acqua
  • 2 cucchiai di scorza di limone
  • 60 g di burro
  • 1 pizzico di sale
  • Miele di Corbezzolo, di Arancio o di Acacia Brezzo
  • olio di semi per friggere

Create l’impasto con farina, burro e acqua. Adagiate l’impasto su di un tagliere infarinato, coprite con la pellicola trasparente per alimenti e fate riposare in frigorifero per mezz’ora.. Nel frattempo preparate il ripieno: versate il pecorino in una terrina, lavorate il limone e grattugiatene la scorza che andrete poi ad unire al formaggio. Togliete l’impasto dal frigorifero e stendetelo su di un piano di lavoro infarinato fino a ottenere un giusto spessore. Con una formina, tagliate la pasta a dischetti, sulla metà dei quali adagiate un bel cucchiaio di ripieno. Poi richiudete il tutto con l’altra metà della pasta. Friggete in olio bollente, scolate su carta assorbente e completate la ricetta con un cucchiaio di miele.

TROPEA, CIPOLLE E MIELE

Tropea è una deliziosa cittadina in provincia di Vibo Valentia, nella Calabria occidentale. Le sue coste sono alcune delle più belle della Regione e forse per questo prendono il nome di «Costa degli Dei». Famose quanto le spiagge, sono le cipolle rosse di Tropea, coltivate nell’interno. Succose e fragranti, adatte alla preparazione di moltissimi piatti, danno il loro meglio se caramellate, sprigionando il loro gusto sapido e dolce al contempo. La ricetta che vi proponiamo è un contorno sfizioso e facilissimo da preparare: cipolle di Tropea caramellate con il miele.

Per realizzarle, seguite la nostra semplice ricetta e ricordatevi di usare un miele dolce e delicato, tipo quello di limone, che enfatizza la dolcezza delle cipolle senza essere stucchevole, grazie alla sua nota acidula. Ricordatevi di unire la salvia, per un tocco estivo e profumato.

INGREDIENTI

  • 450/500 gr di cipolle dolci
  • 30 gr di burro senza lattosio
  • 2 cucchiai abbondanti di Miele di Limone Brezzo
  • 1 cucchiaio di zucchero di canna integrale
  • 2 o 3 foglie di salvia
  • Un pizzico di sale

Pulite, affettate molto sottilmente le cipolle e ponetele in una padella tipo wok con il burro, il sale e le foglie di salvia. Fate cuocere con il coperchio per 10 minuti a fuoco basso. A questo punto possiamo aggiungete il miele e lo zucchero proseguendo la cottura per 20 minuti: gli ultimi 5 minuti senza coperchio in modo da far asciugare l’acqua delle cipolle e permettere la caramellizzazione.

DALLA GRECIA CON “SAGANAKI”

Chi non ha mai desiderato di tuffarsi nel «greco mar da cui vergine nacque Venere», come scrive il poeta Ugo Foscolo ricordando la sua natìa Zacinto? Con i suoi mille anfratti, le isole incontaminate, le spiagge bianche e il turchese del suo mare, la Grecia è il simbolo stesso delle vacanze mediterranee. Anche qui si prepara un dolce caratteristico e facilmente replicabile, che unisce il dolce del miele al salato della Feta, il tipico formaggio di capra conservato in salamoia.

Per il miele, visto il contrasto con il sapido formaggio caprino, consigliamo l’Acacia. Oppure, per un tocco più mediterraneo, il miele di Arancio, caratterizzato da note aggrumate, Eucalipto, leggermente balsamico, o Timo, dal caratteristico profumo di erbe aromatiche.

INGREDIENTI

  • 1  panetto di Feta greca
  • 1 uovo;
  • pangrattato
  • sale
  • olio di semi per la frittura
  • semi di sesamo
  • Miele di Acacia, Arancio, Eucalipto o Timo Brezzo

Prendete il panetto di Feta greca, scolatelo, lavatelo e tagliatelo in due parti uguali per la lunghezza. Passatelo nell’uovo e poi nel pangrattato, due volte per una doppia panatura. A questo punto friggete il tutto, fate dorare, scolate e servite su cara assorbente con una spruzzata di limone e un cucchiaino di miele.

Like every year, it’s summer time again. Temperatures reach their peak, the evenings last late into the night and everyone, more or less, dreams of their place in the sun.

For those who have already reached the beaches or for those who still have to leave – and also for those who will only see the waves on Instagram for this year – here are three recipes that combine “sea and honey”: tasty summer dishes that come directly from the coasts of the Mediterranean and that, at least through the palate, will allow us to take a dip!

IN SARDINIA WITH THE SEADAS

It is difficult to say if the most beautiful coasts of Italy are in Sardinia: but it is easier to give seadas the golden palm as the most delicious dish prepared with honey. Crunchy, fresh (thanks to lemons), enjoyable and delicious, seadas are very easy to prepare and they can delight every palate. Seadas are pancakes stuffed with fresh pecorino, topped – as contemporary chefs say – with very sweet honey. Yeah, but which honey? Since this is a Sardinian dish that uses unseasoned and sweet pecorino, the right honey is Corbezzolo. But for those who do not like its intense and bitter taste, we recommend Orange or Acacia Honey. We recommend half a teaspoon of this honey with a bitter aftertaste on freshly fried and hot seadas: the heat will melt the crystals, slightly soaking the dough and blending perfectly with the cheese!

The recipe is very easy.

INGREDIENTS

  • 100 g of re-milled semolina flour
  • 200 g all-purpose flour
  • 300 g of sweet and fresh pecorino cheese
  • 85 ml of water
  • 2 tablespoons of lemon zest
  • 60 g of butter
  • 1 pinch of salt
  • Corbezzolo, Orange or Acacia Honey by Brezzo
  • Seed oil for frying

Make a dough with flour, butter and water. Place the dough on a floured cutting board, cover it with cling film and let it rest in the refrigerator for half an hour. In the meantime, prepare the filling: pour the pecorino cheese in a bowl, get the lemon and grate the zest that will be added to the cheese. Remove the dough from the refrigerator and roll it out on a floured work surface until the right thickness is obtained. With a mold, cut the dough into discs, topping its half with a nice spoonful of filling. Then, close the dough by folding the other half. Fry in hot oil, drain on absorbent paper and complete the recipe with a spoonful of honey.

TROPEA, ONIONS AND HONEY

Tropea is a delightful town in the province of Vibo Valentia, in western Calabria. Its coasts are some of the most beautiful in the region and perhaps this is the reason why they are referred to as the «Costa degli Dei», the “Coast of the Gods”. As famous as the beaches are Tropea’s red onions, grown inland. Juicy and fragrant, suitable for the preparation of many dishes, they are best caramelized, releasing their savory and sweet taste at the same time. This recipe is a delicious and easy to prepare side dish: Tropea onions caramelized with honey.

To make them, follow our simple recipe and remember to use a sweet and delicate honey, such as lemon honey, which emphasizes the sweetness of the onions without being cloying, thanks to its sour note. Remember to add sage, for a summery and fragrant touch.

INGREDIENTS

  • 450/500 gr of sweet onions
  • 30 gr of lactose-free butter
  • 2 generous spoonful of Brezzo lemon honey
  • 1 tablespoon of whole cane sugar
  • 2 or 3 sage leaves
  • A pinch of salt

Wash and thinly slice the onions, and place them in a wok pan with butter, salt and sage leaves. Cook with the lid on for 10 minutes over low heat. At this point add the honey and sugar, continuing to cook for 20 minutes: the last 5 minutes of cooking will be done without the lid on, in order to dry the onion water and allow it to caramelize.

FROM GREECE WITH “SAGANAKI”

Who has never wanted to dive into the «Greek sea from which Venus was born virgin», as the poet Ugo Foscolo writes when recalling his birthplace in Zakynthos? With its thousand ravines, pristine islands, white beaches and the turquoise of its sea, Greece is the very symbol of Mediterranean holidays. Here, too, a characteristic and easily replicable dessert is prepared, combining the sweetness of honey with the salty Feta, the typical goat cheese preserved in brine. As for the honey, given the contrast with the savory goat cheese, we recommend Acacia. Or, for a more Mediterranean touch, we recommend Orange honey, characterized by citrus notes, Eucalyptus, slightly balsamic, or Thyme, with a characteristic scent of aromatic herbs.

INGREDIENTS

  • 1 piece of Greek Feta
  • 1 egg
  • bread crumbs
  • salt
  • seed oil for frying
  • Sesame seeds
  • Acacia, Orange, Eucalyptus or Thyme honey by Brezzo

Take the stick of Greek Feta, drain and wash it, and cut it into two equal parts lengthwise. Pass it in the egg and then in the breadcrumbs, do this twice for a double breading. At this point, fry everything until golden brown, drain with a towel and serve with a squeeze of lemon and a teaspoon of honey.
